Ingredients
- 360 ml (12 fl. oz.) lukewarm water
- 1 1/2 tbs yeast
- 1 1/2 tbs sugar
- 280 g (9.9 oz.) rice flour
- 110 g (3.9 oz.) cassava starch or tapioca flour
- 1 tbs xanthan gum
- 1 1/2 tsp salt
- 1 tsp vinegar (apple or other)
- 1 1/2 tbs butter (melted) or olive oil
Directions
- In a bowl, mix the water, yeast and sugar, and let it ferment for some 10 minutes
- In a separate bowl, mix the rice flour, tapioca (or starch), xanthan gum and salt
- Pour the yeast mix in the second bowl
- Beat the dough a little – by hand or in a mixer
- Add the vinegar and butter (or oil)
- Finish beating the dough
- The dough should be creamy
- Optional: Bruch some butter on top
- Bake at 200 ºC (390 F) for 40-45 minutes
