Rochele’s gluten-free bread

Ingredients

  • 150 g (5.3 oz) cassava starch (sweet or sour) or tapioca flour
  • 150 g (5.3 oz) rice flour
  • 2 tbs oil or butter
  • 1/2 tsp salt
  • 3 eggs
  • 1/2 tsp xanthan gum
  • 1 tbs yeast
  • 2 tbs sugar

Directions

  • In a bowl, mix all dry ingredients
  • Add 150 ml (5 fl. oz.) lukewarm water, eggs and oil, mix thoroughly
  • Beat the dough – by hand or in a mixer
  • Put the dough in a greased baking pan, and let it grow for some 40 minutes
  • Bake until golden – 200 ºC (390 F), 35 min

Additional Info

  • Yield: One medium-sized bread
  • May be frozen – better to slice it first
