Ingredients
- 150 g (5.3 oz) cassava starch (sweet or sour) or tapioca flour
- 150 g (5.3 oz) rice flour
- 2 tbs oil or butter
- 1/2 tsp salt
- 3 eggs
- 1/2 tsp xanthan gum
- 1 tbs yeast
- 2 tbs sugar
Directions
- In a bowl, mix all dry ingredients
- Add 150 ml (5 fl. oz.) lukewarm water, eggs and oil, mix thoroughly
- Beat the dough – by hand or in a mixer
- Put the dough in a greased baking pan, and let it grow for some 40 minutes
- Bake until golden – 200 ºC (390 F), 35 min

- Yield: One medium-sized bread
- May be frozen – better to slice it first
